I am a lifelong Vegan and used to eat a fruit based diet but after Pancreatic cancer affected my ability to produce insulin I had to switch to a nut based diet.. I tale a protein Powder made of Hemp, Rice and Pea protein and eat massive amounts of Nuts and vegatables.. I do intermittent fasting also so it's like a feeding frenzy over 6 hours

DUDE YOUR MY NEW ROLEMODELL!!
Now you are in trouble for sure...

I credit my longevity in combat sports and coming back from injuries in a large part to my diet.. At 57 I am still an active competitor

I actually run a company that finances government contracts.. I grew up Vegan so never developed a taste for meat or animal products.. It is easy for me plus I am extremely compulsive and am in a fortunate position that even with business I can be myself.. If I have a dinner meeting I just order 6 baked potatoes with nothing on them or something along that line..

I stay away from sugar and salt along with few processed foods other than the protein supplement.. I have had a ton of injuries but I find the diet reduces inflamation and thus speed healing..

i mostly eat asian (thai) style food, which is basically rice, vegetables, herbs, nuts. variations of thai curries and soups. That meals are fast, fresh and easy to prepare and cook. Rice is always ready in a rice cooker and vegetables are cut within seconds. In beetween dried or fresh fruits. Love italian kitchen which is originally super basic and super tasty. Also i prepare all kinds of italian pestos in a blender which i use as spread on (german) full grain bread to create veggie sandwiches. No soft drinks, almost only water and 2-4 cups of coffee per day.
I eat a lot, feel alive and energetic, but i dont gain weight or body fat with that live style. I would love to be a bit heavier but you cant have it all ....
