What do (or don't) you eat?
I was strict vegetarian straight edge for many years. All through teenage to late twenties. Mostly out of ethical concerns, and an infatuation with certain subsets of the hardcore punk scene...
Then, life happened, and I fell off the horse.
Now it's basically omnivore. But I'm a fanatic & skilled home cook and make most of what I eat myself from scratch. Bit of meat, bit of fish, boatload of veggies. Lots of fermented & organic foods. Complex carbs (sourdough bread, brown rice, sweet potato). Diary mostly through cheese and yoghurt. Eggs are lovely. Minimal sugar & sweetness. But copious amounts of tea, coffee, wine, beer, spirits...
Everything in moderation, even moderation itself.

Ps. I have absolutely no interest in making this a vegan vs meat flame war, so keep that in mind.

I eat pretty normal other than I do not eat red meats or pork. I eat alot of fruits, vegetables and nuts. The only dairy I eat comes in the form of cheese. I try not to make bad combos of food but sometimes it is unavoidable and I'm not the strictest person when it comes to food.
I try not to eat fried foods but sometimes the urge to eat fries is overpowering and I give in. I do not eat potato chips or other snacky things either.
I consume alcohol but not all the time. Maybe a beer a week, wine occasionally and some ouzo on ice every few months.
When I am on holiday my diet changes depending on where I am. If I am in the Azores I eat alot more fish than usual. If I am in a place like Spain or Greece I'm throwing down on the lamb and maybe some pork if I really feel like it (rarely).
Basically my diet is based on coffee and bitter resentment towards humanity. Lol
My wife is of Portuguese background and my background is from Puerto Rico. Needless to say rice and beans are staple. Of course we eat tons of Italian food too.
Japanese food is also on the menu because of all the fish options. Saki is a must.

Dave, you mention bad combo's. Are you referring to the Gracie Diet, or something along the lines of Steve Maxwell take (don't combine starches, or combining starches with protein)?

I've been 95% vegan for over a year now. 95% in the sense that I don't actively scan the ingredients of every little thing, and don't care if something had e.g. a bit of powdered egg in the flour or whatever.
I legitimately don't miss meat at all, and apparently don't give a shit about cheese because I haven't thought about it once since I started. Turkish/Middle Eastern milk drinks are my weakness though. I fit one or two of those into my 5% flexibility window every now and then.
All in all, it's been an extremely easy change for me. Haven't noticed any difference in terms of endurance and general stamina, and I think I've actually put on muscle due to eating a few jungles' worth of cashew nuts in combination with quarantine uchikomis.

Yeah I try to follow the Gracie diet as best I can but not very strict about it. Combining starches is a no no for me but I still do it once in awhile.
I try to avoid combining acidic foods as well but not written in stone. I do find that I feel physically better when I follow it more.

I distinctly remember us devouring a sensational pork knuckle in ol' Heidelberg, so I'm curious what made you take the deep dive into the vegan diet.
I am sympathetic to the endeavor though, because I followed something close to it for years, and still eat vegetarian for most of days of the week.

I was a vegetarian for years in my twenties. I'd like to say it was for ethical concerns, but if I'm honest, It was women, each time. :D
But I love veggies, and even now, my wife, 18-year-old son and I are mostly pescatarian but will have some meat here and there in moderation (chicken or turkey mostly). We eat a ton of vegetables every day and cook almost all meals from scratch/meal prepped etc.
I use the slow cooker a lot, especially when it's cold out, soups, chillis etc. As I eat cleaner and cleaner cheat meals make me feel crappy / sluggish, so I could certainly see reducing those more and more.
I'm not super strict, if I crave chocolate, or peanut butter, I'll indulge in moderation, but after a strong workout or something. I'm always interested in learning how others cook / eat / live, so please feel free to share recipes. I'd be down as well.

I hate vegetables (and most fruit). I hate their texture, I hate their taste. With the sole exception of sweet potatoes, I can't bring myself to eat veg, unless I absolutely bury them in cheese.
So my solution has been to put veg in a smoothie, with loads and loads of fruit on top so I can't taste the veg. That seems to work for me. :)
Still, I would probably be fine on a vegetarian diet, as I don't especially care about meat. Tastes nice enough, but I'm perfectly happy with meat substitutes, they taste just as good to me. As long as I can eat cheese, I'm happy. Which is why I couldn't handle veganism. ;)

Flexitarian. Gluten intolerant and low histamine diet currently (the past 6 weeks + counting)
Used to be vegetarian for about 9 years then omnivore and about 8 years ago was diagnosed as gluten intolerant (had rashes and other inflammation issues) and more recently, an over-active histamine situation so just 98% veg and fruit at the moment with salmon, chicken or eggs once a week

I eat everything & I like everything. (The wife is a pescatarian, so less home cooking with meat.)
I try to avoid processed and sugary shit. That's about it. I also prefer to avoid cooking! Eating is where it's at.
I enjoy alcohol practically every day; a choice beer after training, some wine with dinner, or a glass of whisky while watching a movie.
Preferably 4-7 mugs of coffee a day.
No digestion or health issues, I have random stomach pains maybe once in every two or three years.

I've got to where I will eat really healthy before I train, then unhealthy after I train.
I feel good during training, then I pig out after and the shitty food makes me feel tired and lazy and helps me sleep.

The one food I can't manage to eat, are eggplants. I hate them.
For the rest, the bulk of my "nutritional code" has been paleo and keto for years. Keto made wonders for me. Now I'm too lazy to stick to this but generally I don't eat trash food or processed food with too many ingredients on the label that I could not even pronounce. Lot of meat, lot of veggies, much coffee. Yes a glass of wine please. Or a beer.

I eat loads of trashy crap (I'm a sucker for biscuits especially), mainly if my mental health takes a dip. I can normally stick to better stuff if my mood is up, though still not exactly amazing (two meals a day, so variations on the cheese/chicken/sauces sandwiches, then a smoothie).

I'd actually been reducing my meat consumption for years even after moving to the land of Wurst and Saumagen, so that pork knuckle would already have been a fairly rare occurence! Eventually decided to be disciplined and go the whole hog (ba dum tish). Although honestly, "discipline" makes it sound a lot harder than it is. Apart from the likes of Kefir and Ayran, I can't think of anything I miss on a day-to-day basis, so it's not like I'm sitting around suffering. Probably helps that we don't have much of a food culture in Ireland, and I've always been at the extreme end even of that. No ritual about it - hungry, eat something, done.
I also have several teammates who'd been vegan for years - including one who could probably roll until the sun collapses in on itself - so I had plenty of firsthand evidence that athletic performance doesn't suffer at all if you do it right.
Like I said though, 95%. There will definitely still be the odd Kefir after hot summer training sessions. And once the world gets back to normal, I know fine well I'll have to mix things up while travelling. The parts of the world I usually end up in tend not to have shelves full of organic chickpeas to choose from.
I also have several teammates who'd been vegan for years - including one who could probably roll until the sun collapses in on itself - so I had plenty of firsthand evidence that athletic performance doesn't suffer at all if you do it right.

I've found my tastes actually have changed over the years. E.g. in general I've always liked fruits but I never had a thing for fresh strawberries and oranges - they were just kinda meh compared to e.g. raspberries and tangerines.
Nowadays I REALLY like strawberries as well as oranges. Still like raspberries and tangerines as well :)
Another thing is I've always hated gum-candy (e.g gummy bears). Nowadays love them. Especially the vegan variations (no animal gelatine).
And I haven't had any alcoholic beverages for ca 7 years now... thought about he taste of alcohol makes me sick nowadays. But I remember I did really enjoy wine back then... Or maybe I thought I enjoyed wine...

I really like gummy bears.
I had the world's most ridiculous metabolism in my late teens / early 20s. I would take six Reese's Peanut Butter cups to my 8 am Latin class and eat them all, every day. That was breakfast. I was in the 130s and didn't put on a pound.
In retrospect, I think I walked A TON in college and high school and that probably offset my bad eating habits.
I was pescetarian for a few years in my late 20s / early 30s and did enjoy learning how to cook vegetarian.
I had the world's most ridiculous metabolism in my late teens / early 20s. I would take six Reese's Peanut Butter cups to my 8 am Latin class and eat them all, every day. That was breakfast. I was in the 130s and didn't put on a pound.

Yeah, alcohol is something else I don't drink (though I wouldn't say I'm tee total, as I will do stuff like sherry tastings, those can be fun). I binged at uni, but only ever to get drunk, I never enjoyed the taste. So that was easy to give up a few years later.
I do like super sweet stuff, my favourite is Pedro Ximénez sherry. That's like drinking alcoholic syrup. Also mixing orange juice and Tia Maria, that weirdly ends up tasting like an alcoholic chocolate orange. Those are the only two alcoholic drinks I can think of that I'd drink for pleasure, but I can very easily do without them. I have at most 1 unit of alcohol a year, if that (if I add together tastings etc, so if I do a trip to some of my favourite places in Spain, like the Sherry Triangle, or cities in Portugal like Porto).

The glue and sparkles bind everything together for maximum flavor!
